CULTIVATION SYSTEM: spurred cordon
PLANT DENSITY: 4.500 vines per hectare
YIELD PER HECTARE: 600/700 kilograms of grapes per hectare
SOIL: clayey with rocks substratum
VINEYARD AGE: 25/35 years
HARVESTING: harvested by hand in small crates
WINEMAKING: soft destemming-crushing, winemaking in temperature controlled around 28°/30° C. About two weeks maceration on skins, with some pumping and delestages. Malolactic in steel.
REFINEMENT: after malolactic fermentation, wine passes to french oak tonneaux for 20/24 months. Bottling and 6 months refinement in bottle before commercialization.
