WINEMAKING: harvested by hand in small crates, soft stemming-crushing after a short maceration. Cold static decantation. Fermentation in temperature-controlled between 16° and 18° C.
REFINEMENT: on the noble lees, with frequent battonage. Bottling and 1 month refinement in bottle before commercialization.
