HARVESTING: harvested by hand in small crates
WINEMAKING: produced exclusively in best vintages. soft destemming, steel winemaking in temperature controlled around 28°/30° C. About 10 to 12 days maceration on skins, with some pumping and delestages. Malolactic in steel.
REFINEMENT: after malolactic fermentation, wine passes to second passage french oak tonneaux for 12/14 months. Bottling and 3 months refinement in bottle before commercialization.
